I haven't eaten any meat for over 48 hours now--not since Sunday morning. Gregor and I have been doing a lot of research (spurred by the interview he had last week in DC) and we've decided to cut it out of our diets. I actually hadn't had any meat for a few days before the weekend, but I stayed with my aunt and uncle this weekend and they served meat at every meal and I didn't want to be all rude and snotty like vegetarians can often seem.

Anyway, I was a vegetarian for over twenty years (actually, I should say pescavegetarian, which is what I'm doing now--I'll still eat fish) and so I don't think I'll have a lot of trouble sticking to the new plan. Gregor has never even flirted with vegetarianism, so he might have a rougher time of it, but he's doing really well and loving it so far. We went for Chinese yesterday for lunch and he had Ma Pau Tofu and went nuts for it. ♥

I'm making brown rice patties for dinner tonight, which my mom used to make for us when we were kids. Brown rice with peas and edamame and zuchinni and stuff in it, made into patties and cooked in a little olive oil. Nom nom nom. I'll serve a big-ass salad with it.

I feel good about this. Sure, I'm going to miss meat, and things will be slightly inconvenient from here on out, but the ecological implications of eating meat are just more than we can feel good about.
